I had long awaited Thanksgiving, for obvious reasons including PTO to spend with family and Russell’s baked macaroni and cheese.

More so, I was excited for leftovers. Nothing beats a plate loaded up with your favorite Thanksgiving offerings heat-blasted from the microwave…Nothing that is, except for a SANDWICH loaded with your favorite leftovers…heat-blasted from the microwave!

Weeks before Turkey Day, I was reading a Food Network Magazine article that gave tons of leftover inspired sandwich ideas. Turkey clubs, hot open-faced turkey sandwiches, ham and cheese sandwiches…you name it, they had it on a sandwich…I decided that I had to give it a try!

My sandwich:

-Crumble stuffing and stir together with some string bean casserole, set aside.
-Warm turkey, moistened with leftover gravy.
-Smear one half ciabatta bread with cranberry sauce, other half with spicy may (mine had horseradish in it)
-Layer stuffing/sting bean mixture, nutty swiss cheese, turkey and a little bit of extra cranberry sauce…Voila!

It was delicious, filling and huge. I couldn’t pass on sharing the pictures with my fellow foodies. Some restaurants in NYC incorporate Turkey Day leftovers into sandwiches, soups and sushi…I guess I’m not that gourmet yet. Perhaps I’ll try the sushi next year…Or how about a Thanksgiving inspired dumpling soup? You could use turkey broth and fill the dumplings with chopped turkey meat and moisten with cranberry sauce?
